Ingredients
- 500 g minced chicken
- 2 tbsp vegetable oil
- 50 g minced shallot
- 20 g minced garlic
- 2 red chilli, minced
- 10 g minced ginger
- 10 g minced galangal
- 5 g minced aromatic ginger
- 5 g minced turmeric
- 1/2 tsp ground pepper
- 1 clove, ground it
- 1/2 tsp ground nutmeg
- 2 g coriander
- 2 g ground white sesame
- 1/2 tsp ground black pepper
- 1 tsp salt
- 12 lemongrass
- 1 lime leaf, sliced finely
- 30 g grated coconut
Steps
- Heat up some oil, saute shallot and garlic until fragrant. Add the other
ground spices and herbs. Stir until it’s fragrant. Set aside.
- Mix minced chicken and the spices.
- Add grated coconut and lime leaf, mix well.
- Divide the batter into 12 parts.
- Place the ball of the batter on the edge of the lemongrass stalk. Pull
downwards while twisting the dough around the top end of the lemongrass
stalk until it becomes a long circle.
- Grill the satay over hot coals, turning it back and forth until it’s cooked.
- Serve with sambal.
